Salmon with Tomatoes and Capers

I have been loving salmon this summer! I’ve been preparing it in lots of different ways but this recipe has got to be one of my favorites. 

Here's what you need:


  • Salmon fillet
  • Olive oil
  • Cherry tomatoes
  • Pine nuts
  • Capers 
  • Fresh lemon

Here's how to make it:


  • Brush salmon with olive oil of choice - I love to use lemon olive oil
  • Season with salt and pepper to taste
  • In a bowl mix lemon, salt and halved cherry tomatoes
  • Add pine nuts, capers to the bowl 
  • Place your salmon in a pan on medium to high heat
  • Pour your mixture on top of the salmon
  • Cook until you see some browning - I like mine a little burnt
  • Squeeze some fresh lemon juice on top before serving
