Salmon with Tomatoes and Capers
I have been loving salmon this summer! I’ve been preparing it in lots of different ways but this recipe has got to be one of my favorites.
Here's what you need:
- Salmon fillet
- Olive oil
- Cherry tomatoes
- Pine nuts
- Capers
- Fresh lemon
Here's how to make it:
- Brush salmon with olive oil of choice - I love to use lemon olive oil
- Season with salt and pepper to taste
- In a bowl mix lemon, salt and halved cherry tomatoes
- Add pine nuts, capers to the bowl
- Place your salmon in a pan on medium to high heat
- Pour your mixture on top of the salmon
- Cook until you see some browning - I like mine a little burnt
- Squeeze some fresh lemon juice on top before serving
